Raw Macadamia Caramel Slice

Prepare Your Base

Ingredients

  • ½ cup desiccated coconut
  • ½ cup macadamia nuts, soaked for two to three hours (or overnight), then rinse
  • 3 tbsp coconut oil, melted
  • 2 tbsp almond butter

Method

  1. Blend all ingredients in a food processer
  2. Press mixture into a shallow lined tray (approx. 15x 20cm)
  3. Place in fridge to set for 30 mins

 

Prepare Salted Caramel Filling

Ingredients

  • 1 cup pitted medjool dates
  • 1 tbsp macadamia nut oil
  • 2 tbsp macadamia nut butter
  • 1 tbsp maple syrup
  • 2 large pinches of salt flakes, plus extra to sprinkle

Method

  1. Blend all ingredients in a food processer or blender
  2. Spread mixture over base
  3. Set in fridge for 1 hour

 

Prepare Your Topping

Ingredients

  • 3 tbsp coconut oil, melted
  • 3 tbsp maple syrup
  • 3 tbsp cacao powder

Method

  1. Whisk all ingredients in a small bowl to combine
  2. Pour topping over caramel filling and set in fridge for 1 hour
  3. Use a hot knife to cut slice into desired shape and serve
